All you have to do is set your oven to 350F, grease a muffin tin with non-stick cooking spray, and crack your eggs into the tin. Then add some flavor with a little shake of salt and pepper. Bake for about 17 minutes and viola.

Ingredients
- Large eggs (however many you want)
- Nonstick cooking spray (I use olive oil or coconut oil spray)
- Salt and pepper, to taste
Instructions
- Preheat oven to 350ºF and spray a nonstick muffin tin with nonstick cooking spray.
- Crack eggs into the tin. Season with salt and pepper.
- Bake eggs at 350ºF for 14-18 minutes or until the yolks have reached the desired texture.

I had one of the eggs hot, right out of the oven and it was pretty tasty, but I prefer them cold.
I can’t seem to get runny yolks without the white not cooked properly
Mine came out rock solid after only 12-13mins….I wonder, is this recipe for eggs being cooked straight out of the fridge? I’m in the UK and we don’t keep eggs in the fridge so maybe it needs tweaking depending on the temperature of the eggs before they go in the oven. I will try again, probably around the 6min mark.

Definitely try these if you are on the fence with eggs they are terrific. I dont like hard boiled eggs and struggle with ways to eat them as part of my weight loss journey but baked eggs are the way to go! It’s a game changer for me(its a texture thing with boiled eggs for me) But these are just different enough I can handle it! 🙂

We use a mini muffin tin. Preheat oven to 350°. Crack 7 eggs in a small glass pitcher and whisk smooth. Place a layer of canned mushrooms at the bottom of each cup. Pour whisked eggs to ¾ depth. Fill the cups with a layer of shredded cheese. Bake for 14 to 18 min. The eggs miniatures can be eaten in one bite. We eat them as finger food.

I made these and I placed a slice of Deli ham in the sprayed muffin tin cups put in the egg and salt and pepper then shredded cheddar on top cooked 17 minutes. The were not runny ( yes that is how I like them) this makes for great meal prep for the work week. Thank you for sharing.

Using the muffin pan is brilliant. I used to bake in ramekins. The eggs were awkward to get out and it created a fair amount of mess/dishes. This way is so much easier. Using the pan never occurred to me! Thanks!
